This is Dexter Shin cut laterally through the bone in discs. Each disc is approx 450g in weight and contains a piece of marrow bone. exceptionally depth of flavour and is traditionally used in the Italian stew Osso Bucco ( it actually means hollow bones in Italian as this is what the bones become as the marrow falls into the stew.)
