We have had some new photos taken for the web shop we are launching. Here is a Dexter Wing Rib. This is the 6 & 7 and 8th rib of the beast counting from the front. The first five are the Fore Rib. It is made up of the sirloin muscle with the chime bone removed. We tend not to French trim these because the meat and fat add a lot of flavour and a different taste to the main sirloin.
