This is a shoulder of Organic Herdwick Lamb. This breed of lamb spends the summer grazing the high fells and mountains and the autumn and winter on the lowland fields of Cumbria. Believed to descend from sheep brought over with the Vikings they are a a big and beautiful part of our landscape. Awarded Protected Designation of Origin (PDO) status in 2013. Slow grown and slowly maturing it’s got a unique flavour sought after by chefs nationwide. The meat is fine grained, tender and darker than commercial breeds. To be classified as PDO the lambs need to be bred, raised and slaughtered in Cumbria.
