Little known Cumbrian Egg, This is a lateral section of one of our Dexter Shins. The yellow of the marrow reflects the yellow fat of the carcass and although pure speculation on my part would suggest it’s because of the 100% grass fed diet. Picture courtesy of @travellinggaucho
