Beautifully cut rolled Dexter ribeye. Dexters are about 60% the size of other native breeds such as belted galloways and their muscle fibres are correspondingly smaller. This makes them naturally more tender. I always think it’s the same amount of taste in a smaller package which accounts for the superior flavour Dexters are renowned for.
