Back where it all started. We had supplied individuals with boxed Dexter and a restaurant close to our cows (@1863_restaurant) for a few years but at the start of lockdown Heritage Meats owner Bennet Lee got in touch looking for Dexter beef to be sent out to his butchers shop in Hong Kong.
A man of great insight and passion we’ve learnt a great deal about sustainable meat, nose to tail butchery and maximising carcass yield from Bennet and he continues to challenge our established thought process.
This is the forerib of the latest Dexter to make the long journey to Hong Kong and joins a vast array of rare and traditional meats from around the globe. Quite a few from Lake District, farmers like @thefarmingbeaumonts who have sent him their extensively reared Kune Kune pigs.
I’ll always be very grateful for that message, which I found initially surprising, as it opened an exciting door for us.👏👏💪.
